Gluten Free Golden Syrup Cake
One thing I used to miss on a gluten free diet was a really great pudding; sometimes you just fancy a warm puddingy dessert especially when its cold! This gluten free golden syrup cake tastes delicious on its own but it is even better served warm with custard. This recipe is super quick and you only need five ingredients: sugar, butter,golden syrup, flour and eggs. Because I make my recipes lactose free as well as gluten free I use Vitalite in all my baking but if you don’t need to do this then obviously any butter or margarine will work the same.
Ingredients:
- 4oz/100g dark brown soft sugar
- 8oz/200g Vitalite
- 2 eggs
- 2 tablespoons golden syrup
- 8oz/200g gluten free self raising flour
First off pre-heat the oven to 170C/gas mark 3. Then grease and line a 21cm round tin.
Put the butter and the brown sugar in a bowl and cream it together using a wooden spoon until it is nice and smooth. Then, in a separate bowl, whisk together the eggs and the golden syrup. It may not seem like it is mixing together but stick with it, it just takes a few minutes. Next, fold in the flour, and then add the golden syrup mixture and mix everything very well so that the consistency is smooth-make sure theres no brown sugar lumps in there. Pour the mixture into a greased and lined tin; you can use a square tin or a round tin whatever you have; I use a loose base tin just to make it easier to get out. When you have poured the mixture in, sprinkle the top with some extra brown sugar; it gives the finished pudding a lovely crunchy topping.
Then put it in the oven and bake it for around half an hour, or until a knife or cake tester, when stuck in the middle of the cake, comes out clean. When it is cooked, leave it in the tin for a few minutes before running a knife around the outside of the tin. If you havent used a loose base tin, place a hand on the top of the cake as you turn the tin upside down then place it onto the cooling rack as you want the crunchy sugar to be on the top. Enjoy it straight away as a pudding or leave it to cool and serve it up as a cake! Enjoy the golden syrup goodness!
