Gluten Free Strawberries and Cream Cupcakes
I know it is only April but the recent good weather has made me feel so summery and for me, summer=strawberries! Even better, Strawberries and cream! Even BETTER, it’s gluten and lactose free!!!
Ingredients:
- 4oz Caster sugar
- 4 oz Vitalite (margarine/butter)
- 6oz gluten free self raising flour
- 2 eggs
- 1 tbsp milk lacto-free milk
- 1 carton of lacto-free cream (made by Arla-it tastes just the same as ‘normal’ cream!)
- 1 punnet of strawberries-you don’t need a whole punnet….. you’ll just have to eat the rest. Shame.
Pre-heat the oven to 180C/gas mark 4.
This recipe is so quick and easy; put all the ingredients into a large bowl and whisk with an electric mixer! And that is literally it…
I didn’t use cake cases, I just greased a cupcake tin and added the mixture in straight away but if you are using them fill a 12 hole cake tin. Add the mixture to the tin or cases; you want to fill each case about 3/4 full.
Put it in the oven and cook for about 20-25 minutes until they are golden brown and a skewer comes out clean.
Let the cakes cool for about 5-10 minutes before you take them out. If you are not using cake cases run a knife around each cake and then turn them out. Then let the cakes cool completely before you decorate them.
For the decoration; you want to make a hole in each cake for the strawberry. So take a knife and cut a strawberry-sized hole in each cake-not too deep. Then scoop the remaining cake left in the little hole but make sure you don’t scoop all the way to the bottom.
Then add your strawberry-without the leaves!
Whip up your cream using an electric mixer until it is really thick and spread it over the top of each cupcake.
I added a little more strawberry to the top just to finish them off; go enjoy the strawberry goodness!!
