Gluten Free Chicken Fajitas
I had never even tried Mexican food until I met my husband and he is crazy about it! The fajita seasoning that they sell in the supermarkets all seem to have gluten in them, or milk, which for me is a no go! This recipe contains neither and, even better, it is nice and easy so you can whip some fajitas up in no time at all.
- 1 pound chicken breasts, cut into strips
- 3 tbsp oil
- 1 tsp chilli powder (if you like things hot add as much as you like!)
- 4 tsp cumin
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp salt
- small tin of chopped tomatoes
- 1 onion, sliced
- 2 bell peppers
Pre-heat the oven to 200 C/gas mark 6. Slice the chicken into strips and place them into a large greased oven proof dish. Slice the onion and the peppers into thin strips and place them in the dish.
In a small mixing bowl, put the oil, garlic powder, dried oregano, salt, cumin, chilli powder (I use mild because I can’t handle anything more! But you can adapt according to your own preference) and mix together. Pour the mixture over the chicken so that all the pieces are coated well. Next pour in the chopped tomatoes. Using your hands mix everything together so that the onion, pepper and chicken are all coated in the sauce. Place the dish in the oven and cook for 40-45 minutes-until the chicken is cooked through. Then its time to make up your fajita! I use BFree gluten free tortilla wraps; they are pretty good! Warm them up for a few seconds in the microwave before you fill them with your delicious fajita mix! I like to add lacto-free cheese and salsa!
