Gluten Free Banana Bread
This Gluten Free Banana Bread is a tasty must to have around the house!
Ingredients:
- ¾ oz Rice flour
- 8 oz gluten-free Plain flour
- 1 tsp Xanthan gum
- 2 tsp Baking Powder
- 3 Bananas, mashed
- 8 ½ oz Caster sugar
- 4 ½ oz Vitalite
- 2 Eggs, beaten.
- ½ tsp vanilla essence
- 6 oz dark chocolate chips
Pre-heat the oven to 180 C/gas mark 4
Sift the rice flour, plain flour, xanthan gum and baking powder into a bowl. In a separate, larger bowl, mash the bananas and then add the sugar, Vitalite, eggs, vanilla essence and chocolate chips. Mix them together well with a wooden spoon. Then add the flour mix and fold it in gently.
I used a silicon loaf tin but if you have a regular one, grease and line it with greaseproof paper.
Bake it in the oven for about 40-50 minutes until a knife comes out clean when put in the middle.
Remove from the oven and allow to cool in the tin for half an hour before transferring it to a cooling rack.
Slice it up and eat it plain or spread it with butter, enjoy!!!
