Gluten Free Chocolate Cream Biscuits
Miss the taste of a bourbon biscuit? Well look no further as I show you how to make these delicious Gluten Free Chocolate Cream Biscuits!
Ingredients:
For the biscuits:
- 4 oz gluten-free plain flour
- 2 oz caster sugar
- 2½ oz Vitalite (margarine/butter)
- 1½ tbsp cocoa powder
- 1 tbsp golden syrup
- 2 tsp baking powder
For the filling
- 2 oz Vitalite (margarine/butter)
- 4 oz icing sugar
- 1½ tsp cocoa powder
- a couple of drops of vanilla essence
Pre-heat the oven to gas mark 3.
Place all the biscuit ingredients into a large bowl and use a wooden spoon to mix them together. Use the back of the spoon to really mix the butter in; it will take a couple of minutes for the ingredients to mix together well.
When they are combined, use your hands to press the mixture into a ball of dough. Turn it onto a lightly floured surface and knead for a minute or two.
Next, place the dough on a sheet of greaseproof paper and roll it out to about ½cm.
Then cut the dough into fingers; about 1 inch by 2½ inches.
Grease and line a baking tray and place the dough fingers on the tray.
Bake them for about 10-15 minutes until the tops start to dry out. When they are cooked sprinkle a little sugar over the biscuits and let them cool completely before taking them off.
Then make up your buttercream filling. Place the margarine and icing sugar in a small bowl and mix it with a fork until it is combined. Then add a couple of drops of vanilla essence and mix it in. Use the buttercream to sandwich the biscuits together in pairs and voila! Enjoy your delicious Gluten Free Chocolate Cream Biscuits!
